This is the season to break out the crock pot and make some delicious hearty soups. Pho soup is easy to make and so nourishing! I am not much of a recipe person but I am going to try to guide you through how I make my pho soup.
What you will need:
2 cubes of vegetarian boullion
1/4-1/2 cup of red or white miso paste
8 cups of water
1 cup of brocolli
1 cup cubed tofu
1 cup of chopped kale
1 cup other veggies optional (fresh nettles when in season is delicious)
1 tablespooon of grated fresh ginger
1-2 cloves of garlic
1 heaping teaspoon of chinese 5 spice (we carry this at our shop)
3 tablespoons of our 14 mushroom blend
1 handful of rice noodles or ramen noodles
Bring water to a boil, add the boullion cubes, and miso, mushroom powder and chinese 5 spice. After that is all dissolved add your vegetables and tofu (or chicken if that's your thing). After about 5 minutes add the noodles and bring down temp to low. In about another 3-4 minutes your soup is ready!
Topping ideas, add a little tamari, rice vinegar, roasted sesame oil, or sriracha sauce, with shredded carrots, cabbage, basil, cilantro, jalapeno slices.
